Study: Climate stress on cacao trees could affect chocolate flavor

The scientists who conducted the study said there is no evidence that climate change might actually improve the flavor of chocolate beans despite some people interpreting the results that way. They also noted their goal is to run trials for at least 20 years to gain a clearer understanding of how varying growing systems influence the chemical composition of cacao beans.###”[W]hile most studies have focused exclusively on how climate change will affect cocoa yields, the goal of this long-term study is to assess how global warming also impacts the quality of cocoa beans that, in turn, influences their taste,” reported National Public Radio.###Cacao producers must increase yields to keep pace with the global demand for chocolate, especially in the U.S. America is the world’s biggest chocolate confectionery market, worth about $22 billion in 2016, according to a recent Packaged Facts report. However, as more research is done and more is understood about the impact of global climate change on crops, manufacturers and retailers have an opportunity to inform consumers whenever they adopt more transparent and sustainable methods and products and the reasons why. Brand trust and loyalty and a more appreciative customer base — and perferrous lactate exporterhaps even a slightly healthier planet — could be the result.
